2025 brings a new celebration of Ibiza´s talent in music and gastronomy, with more DJ´s and live performances, great chefs displaying their culinary prowess and of course, our cocktails.

Celebrating local gastronomy and produce

Sunset Menu

In 2024, our Meet the sea sunset menu featured four canapés and a dessert:

Chef Bruno started our sunset with a coca ibicenca or simple pastry made with flour and water as was the tradition on the island. The roasted red peppers are a very common ingredient in Ibiza cuisine and deserved being on our first canapé. In this case they were married with a local chicken tenderised for 24 hours of slow cooking and truffle mayonnaise.

The historical scarcity of chickpeas or garbanzo beans on the island was no obstacle for locals to create a paste very similar to the phoenician or middle eastern hummus. Ibicencos used broad green beans instead and arrived at a flavour that was softer, less dry than hummus.

Our chefs combined the broad bean hummus with a tabbouleh, also of middle eastern origin, and mint leaves to refresh the mix of the two. The Ibiza touch, aside from the broad beans, comes from the oil grown by Can Miquel Guasch.

Sobrasada is a balearic sausage with porc meat and abundant paprika (ground roasted red peppers) that gives it its distinctive colour. The contrast with the sweet tomato preserve softened the impact of the sobrasada. The goat cheese from Ses cabretes is a surprise in quality and flavour that culminates this bite on a delicate soft note.

The flavour of local asparagus came through strongly and the light natural salt of the salicornia with its green colouring power was a surprise. So happy to have included a plant often disregarded in our cuisine and of course, our traditional crostes:

A bread that was cooked twice to obtain its crunchiness and that served fishermen in particular, as it stayed intact for months.

Our most famous dessert becomes more than the sum of its parts with a crumble of its base pastry, the foam of soft goat cheese and the mint infusion. Instead of aniseed, a hint of the local liqueur of Hierbas ibicencas by Mari Mayans.

Our sunset was made special as well by Sandy Valey, an artist that is well known to everyone on the island...​
